The carrot cake is awesome. When I make it at home, it diesappears within a week... maybe less than that. As soon as it's out of the oven ((lol)) my husband goes after it resulting in less cake to frost and singed fingers XD.

Ok here's one from my grandmother. I don't know the exact measurements so bear with me. And if you try it, experiment to see what measurements work! ((and again the measurements are in the US version... Also the veggies in this are known as the Trinity.))

Dirty Rice

1 lb ground beef
1 lb ground sausage (preferably spicy)
2 cups of rice, cooked
1 medium onion finely diced
1 green pepper finely diced
1/2 cup celery finely diced
Sage
Poultry seasoning
Cayenne pepper (optional)
Salt and pepper

Cook rice as directed on the packaging, set aside. In a large skillet, cook the "Trinity" with the beef and sausage. When the meat is brown (no longer pink) and veggies tender drain the grease. Add rice and mix thoroughly. ((This might get messy.)) Then add sage, poultry seasoning, salt, and pepper. Season until the rice is "brown" or looks lightly "dirty". If the taste isn't to your liking, just add more. Cayenne pepper is optional so add to your tastes.

Yield: ALOT

Here's one old family recipe which is also found on the web.
It takes time to cook but ay... mi dios su tan bueno :angel:

[color=red:31ftpoqm]Mexican Style Shredded Pork [/color:31ftpoqm]

Ingredients

1 (3 pound) boneless pork loin roast, cut into 2 inch pieces
1/2 teaspoon salt
2 diced green chile peppers
4 cloves garlic, crushed
1/4 cup chipotle sauce [tabasco will do if you can't get chipotle]
3 1/4 cups water, divided
1 1/2 cups uncooked long grain white rice
1/4 cup fresh lime juice
1/4 cup chopped cilantro

Directions

1. Place the roast in a slow cooker, and season with salt. Place chile peppers and garlic on top of roast. Pour in the chipotle sauce and 1/2 cup water.

2. Cover, and cook 7 hours on Low.

3. In a pot, bring remaining 2 3/4 cups water and rice to a boil. Mix in the lime juice and cilantro. Reduce heat to low, cover, and simmer 20 minutes.

4. Remove roast from the slow cooker, and use two forks to shred. Return pork to the slow cooker, and allow to sit 15 minutes to absorb some of the liquid. Serve over the cooked rice.

Here's a personal favourite (There are many variations, but this is one of the simpler ones)

Bara Brith (Speckled Bread)

Ingredients:

12 oz. Mixed Fruit
8 oz. light Muscovado Sugar
10 Fluid oz. strong tea
10 oz. Self-Rising Flour
1 Egg, Beaten

Cooking Instructions:

Measure fruit and sugar into a bowl. Pour over hot tea. Leave overnight.
Lightly grease a 2lb. loft tin. Stir flour and egg into the fruit, mix well.
Turn into prepared tin and level.

Baked at 150C - 300F - gas 2 for 1 1/2 to 1 3/4 hours or until well risen and firm to the touch.
Allow to cool in tin for 10 mins. before turning onto a wire rack. Leave to cool completely.
